Let's skip the sob story about how I learnt to make them. To confess, I found them on Jus-Rol's site.
Here's a more detailed and better looking

  • 1 Roll Puff Pastry
  • Smoked Back Bacon Rashers/Bacon Medallions (Premium sort. Cheaper bacon has more water which affects the pastry and oil-yness
  • Cheese (cheddar/red leicester is recommended)

Step 1

Preheat oven to 220°C

Step 2

Layout your pastry and cut into squares. A normal sheet of Jus-Rol pastry should get ~6 squares

Step 3

Layout the bacon on the pastry! You can tuck the tail underneath the bacon so it fits

Step 4

Wash all 4 corners with milk (for that golden pastry effect)

Step 5

Shave some cheese onto the bacon (don't worry if you get some on the baking tray). Too much cheese can make it too greasy or too cheesey. A light shave like below is perfect.

Step 6

Fold the pastries over itself into little envelopes

Step 7

Wash the tops on these wraps with more milk wash

Step 8

Add more cheese on top!

Then a sprinkle of freshly cracked black pepper. Salt shouldn't be needed because of the bacon

Step 9

Put into the oven for ~12 minutes or until the pastry is a nice golden brown.
