To confess, I found them on Jus-Rol's site.
- 1 Roll Puff Pastry
- Smoked Back Bacon Rashers/Bacon Medallions (Premium sort. Cheaper bacon has more water which affects the pastry and oil-yness
- Cheese (cheddar/red leicester is recommended)
Preheat oven to 220°C fan-assisted
Layout your pastry and cut into squares. A normal sheet of Jus-Rol pastry should get ~6 squares
Layout the bacon on the pastry! You can tuck the tail underneath the bacon so it fits
Wash all 4 corners lightly with milk (for that golden pastry effect after cooking)
Shave/grate some cheese onto the bacon (don't worry if you get some on the baking tray). A light shave like below is perfect.
Fold the pastries over itself into little envelopes
Wash the tops on these wraps with more milk wash
Add more cheese on top!
Then a sprinkle of freshly cracked black pepper. Salt shouldn't be needed because of the bacon
Put into the oven for ~12 minutes or until the pastry is a nice golden brown. Please also ensure the bacon is cooked!
